肉卷

潮洲人的肉卷(bak kien),应该是福建人所谓的“卤肉”(lor bak)吧?

材料 :

肉碎,虾肉(稍微剁一剁),洋葱切粒,芜箐切粒,红萝卜切粒,青豆,鸡蛋。

调味料 :麻油,蚝油,五香粉,胡椒粉,栗粉。

做法 :

1)将材料用调味料搅拌后,用腐皮卷起,再放入热油煎熟就ok 了。

其实可以将整条肉卷煎好后才切块,我懒惰清洗油腻腻的刀和砧板,所以直接用剪刀剪成小粒放进油里煎。结果就“有大有小”,奇形怪状,每什么看头 😦
